Few things are more helpful than a great recipe. So how about an easy, healthy recipe? Or, better yet, a half dozen easy, healthy recipes?

We made each of the recipes below to verify the time, ease and deliciousness. Each one can be prepped ahead of time, or pulled together quickly in a pinch, and all feature ingredients that are easily available.

Crispy chickpea bacon ranch salad via Macheesmo

“Sometimes salad can be a bit of a letdown and I find myself heading back to the pantry for a snack an hour or two after dinner. But, this crispy chickpea bacon ranch salad is hearty enough and big enough to really fill you up!”

Spicy Coconut Chicken Wraps via (once again) Macheesmo

“These chicken wraps are all of those things. You can poach chicken for the wraps or just use a rotisserie chicken! The combo of coconut milk, curry, chicken, and crunchy veggies makes for one great wrap!”

Kale Slaw with Peanut Dressing via Martha Stewart

“An untraditional take on coleslaw, this salad has thinly sliced kale tossed with crunchy bell pepper and carrot slices. The slaw is finished with a salty peanut dressing and adds a fresh, vibrant note to your plate.”

Shaved Asparagus Salad Recipe via Chowhound

“Shaved salads are a simple way to showcase the best of farmers’ market vegetables. Thinly slice vegetables using a vegetable peeler, toss them in a lemony vinaigrette, and top with salty cheese, like Parmesan, and nuts.”

Balsamic Strawberries with Arugula via Mark Bittman

“In Italy, where balsamic vinegar originated, strawberries with balsamic are served as a dessert. But the combination is equally fantastic in a savory salad.”

Strawberry & Yogurt Parfait via Eating Well

“This healthy yogurt parfait recipe combines fresh fruit, Greek yogurt and crunchy granola for an easy breakfast. (or dessert! — Ed,)”
